I was fortunate to be raised in a family of fabulous cooks who value and appreciate healthy, nutritious, and delicious food. I learned to cook at an early age, and worked in professional kitchens throughout my teens and twenties. Growing up I took for granted eating organic, in-season, fresh (from our garden) food, milk and cheese that came from our goats, and eggs from our chickens. When we had meat it was raised and butchered by my family, or traded from a local farmer. As a mom I always wanted to give my two daughters the best food available and teach them healthy habits for life.
For the past 15 years I have been researching what the optimum diet is for training as an elite level athlete and have figured out what works. Each person is different when it comes to food, but there are some basic things that can apply to everyone. We all need to have the right amount of macronutrients (Carbohydrates, Protein, and Fat) and a good balance of fiber, and micronutrients (vitamins and minerals) in our diet. This can vary for each individual depending on their goals and lifestyle. My aim as a nutrition coach is to help my clients develop lifelong healthy habits that improve nutrition, health, and overall well-being.
